FAST, FESTIVE, AND FABULOUSLY DELICIOUS!

Your go-to pumpkin recipe just got EASIER! Using only TWO INGREDIENTS, you can make the most most delicious, moist, chocolate chip pumpkin bars EVER. However, if you prefer a little more *spice in your life* you can jazz this recipe up with additional fall flavors you might have hiding in your spice cabinet – like ground cinnamon, brown sugar, and/or pumpkin spice. Additionally, you can drizzle a homemade cream cheese icing overtop for an even sweeter finish!

*Notes* While this recipe is PERFECTLY delicious with just the 2 simple ingredients, why not add in a little extra flavor if you have it lying around? Heck, it’s not every day you’ll get the chance to use these ingredients!

For an enhanced fall flavor, sprinkle in 1-2 tablespoons of any or ALL of these optional spices into your cookie pumpkin mixture. *TIP: We like to sprinkle brown sugar over top of the mixture just before baking to create a crunchy brown sugar crumble topping!

*Notes* Again, the cream cheese icing is 100% optional, but if you’re in the mood for a little added sweetness – we recommend this simple homemade cream cheese icing to top it all off!

INGREDIENTS:

1 pkg Betty Crocker Chocolate Chip Cookie Mix

1 (15 oz) can Pumpkin Puree

 

Optional Added Flavor *See Notes*:

Ground Cinnamon

Pumpkin Spice

Brown Sugar

 

Optional Cream Cheese Icing *See Notes*:

7 tablespoons butter, softened

2 ounces cream cheese, softened

2 tablespoons milk

½ teaspoon vanilla extract

1 cups confectioners’ sugar, sifted

DIRECTIONS:

Step 1 Preheat oven to 350 degrees. Grease 8×8 baking dish and set aside.

Step 2 In a large mixing bowl, add 1 package of Betty Crocker Cookie Mix and 1 (15 oz) can of 100% pure pumpkin puree. Stir until well combined. Add in any optional spices*. Spread evenly into greased 8×8 baking dish.

Step 3 Bake at 350 for 20-25 minutes or until done. (Use the toothpick method to test doneness – insert a toothpick into the center, if it comes out clean, they are ready. If there is dough on the toothpick, bake for another 2-3 min).

Step 4 (For Optional Icing Only): While your pumpkin bars bake, make the optional icing by mixing the softened butter and cream cheese until smooth with an electric mixer. Then, mix in the milk & vanilla extract. Once combined, slowly add in the sifted powdered sugar, about 1/4 of a cup at a time. Combine until smooth, and drizzle over your warm pumpkin bars!
