Nothing says “oh, sweet summertime” like a lazy summer BRUNCH!

This easy, diverse, ONE DISH summer quiche is a great way to feed a crowd of any size, and the PERFECT way to wake up on a warm summer Sunday. The best part is, you can prepare one (or more) a day in advance to make your mornings even EASIER. Choose from one of our three favorite flavor combinations, or make them all for a larger group!

Whichever variation you choose to create, you’ll need the following ingredients as a base! Then, add the elements from the quiche of your choice: Spinach and Tomato, Broccoli and Cheddar, or Ham and Cheddar – you can’t go wrong with any of them!

BASE INGREDIENTS:

1 (9-inch) refrigerated pie crust

1 tbs olive oil

Cooking Spay for dish (or additional olive oil)

6 large eggs

½ cup heavy cream (or milk)

Salt & Pepper to taste

Freshly Chopped Basil (for garnish if desired)

DIRECTIONS:

1. Preheat your oven to 350 degrees F. Form pie shell in pie dish that has been sprayed with cooking spray/oil.

2. Heat olive oil in a skillet over medium high heat. Sauté veggies and/or meat for approximately 3 minutes, or until tender.

3. In a medium bowl, whisk together eggs, heavy cream/milk, shredded cheese, cooked veggies and/or meat (depending on which variation you are making), salt and pepper until combined.

4. Evenly pour egg mixture over pie crust

4. Bake for 40 minutes, or until eggs are set and crust is golden brown.

5. Top with fresh basil, if desired.

*To prepare in advance, cook the quiche about halfway, let cool, cover, and refrigerate. When ready to enjoy, cook the quiche for the remaining time in the oven.*

1 package frozen shortcrust pastry dough

2 cups packed fresh spinach leaves, trimmed and washed thoroughly (you can also use frozen spinach after defrosting and draining extra liquid)

1⁄3 cup shredded mozz cheese

10-12 cherry tomatoes, halved

2 cloves garlic, minced

2 tablespoons fresh chives, chopped

2. BROCCOLI & CHEDDAR

1 head fresh broccoli , roughly chopped (about 3 cups)

1/2 cup shredded cheddar cheese

1/2 cup shredded mozz cheese

3 green onions , chopped

1 teaspoon garlic , minced

1 ½ cups shredded cheddar cheese divided

3 tablespoons sliced green onions
