This Pea Pesto Pasta is ridiculously simple to create and the results are incredibly delicious! With hardly any prep, this pesto whips together in just a few minutes, while perfectly capturing Spring in one bite! Use it as a spread, dip, or pasta sauce.

*SPRING FLAVORS* *VEGAN* *FRESH & FAST*

INGREDIENTS:

2 cups peas, either frozen and thawed- or use fresh English peas

1/2 cup packed mixed herbs mint, tarragon or dill

2 1/2 tablespoons lemon juice plus zest of one lemon

1 tablespoon minced chives or green onion

1/2 teaspoon salt

1/2 teaspoon black pepper

1/8 cup olive oil

DIRECTIONS:

1. In medium pot, boil water and cook pasta according to package directions

2. While pasta cooks, chop the herbs and zest and juice the lemon.

3.. In a food processor add peas, herbs, lemon zest, lemon juice, chives (or green onion), salt, pepper and olive oil.

5. Pulse for a few minutes until the peas break down to a nice even texture.

6. Once pasta is cooked and drained, combine with freshly prepared pesto & serve immediately, or refrigerate for up to 3 days & serve cold.
