This salad is a fun twist on a traditional fruit salad and perfect for your next OBX get together

This simple and delicious watermelon salad is one of the reasons we love summertime cook-outs! Fresh, flavorful and super easy to put together to bring to your next gathering on the Outer Banks.

Summer foods should be enjoyed outdoors.

What pairs better with hot dogs and hamburgers grilled at the beach or near the pool than watermelon? You can never have too much watermelon. This beautiful salad will liven up any summer potluck or cook-out.

WHAT YOU’LL NEED

8 cups cubed watermelon Choose red ripe seedless watermelon, the larger the yellow “sun spot” the sweeter the melon. “Knock” it if you perfer that old tried and true method, it should have a nice thud, not a dull sound when knocked.

1/2 cup crumbled feta cheese Feta is a mild salty crumbly Greek cheese made from the milk of ewes or goats. It’s versatile and complements sweet and savory dishes.

1/4 cup chopped basil Fresh basil is needed for this recipe. You can find it in your grocery produce aisle. You could also use fresh mint if you can’t find basil.

2 tbsp lime juice – A squeeze of fresh lime enhances the ingredients and gives another layer of fresh to the salad.

Optional:

2 tbsp balsamic vinegar

DIRECTIONS

  1. Cube your watermelon close 1″ squares. Place in large bowl. Add your chopped basil and crumbled feta, then squeeze lime over top. Stir gently once.
  2. Place in fridge to chill until ready to serve, or take with you to cook out.
  3. Optional: Drizzle Balsamic Vinegar over salad for an extra tang.

Hint: If you’re close to the Fourth of July, toss in a quart of fresh blueberries to make this salad patriotic.

If you are looking for more unique ways to serve this delicious salad:

  • You can stack the ingredients in layers (as pictured above).
  • You can cut the watermelon into a ring and place ingredients back in for serving.
  • You could also use a small metal cookie cutter and cut your watermelon into the shapes of stars.
  • More flavors profiles to consider – Add walnuts. Add slivers of red onion. Add apples, pears or cucumbers sliced thin. Add a vinaigrette.
