Fresh strawberry pie topped with whipped cream is one of the best desserts you and your guests will enjoy this spring
Nothing screams spring like fresh strawberries plucked from the warm sun. But there is a part B to enjoying all the berries you picked – –Â it’s called a cool and refreshing homemade strawberry pie.
This easy recipe is will make your store-bought strawberries taste fresh picked. This pie is not only delicious, but it’s a real show-stopper!
Picking fresh strawberries is always a great family experience
To make this incredibly fresh dessert in no time you can also purchase a ready-to-fill pie crust. Just make sure it’s prebaked and cooled for use. You’ll need: Fresh strawberries, strawberry gelatin powder, cornstarch, sugar, and a pie crust.Â

INGREDIENTSÂ
- 1 CÂ SugarÂ
- 1 C WaterÂ
- 3 TBSP Strawberry Jell-O® Gelatin* MixÂ
- 3 Heaping Tablespoons CornstarchÂ
- 1 Pint Fresh StrawberriesÂ
- 1 Pie Crust (make your own or buy ready to fill)Â
- Heavy Cream (for whipping)
Super short cut idea: If you are short on time or aren’t into cooking, you can also buy a ready-made strawberry glaze found in the produce department of your local grocery store – if so, omit the top four ingredients above, you’ll just need strawberries, pie crust and whipped cream. This will also cut out about 15 minutes from the process.

STEPSÂ
- In a small saucepan place your sugar, strawberry gelatin mix and three heaping tablespoons of cornstarch, then stir it up!Â
- Add water to the mix and place over a medium to medium-high heat and start stirring constantly. It will take about a minute or two. You will notice the mix becoming see-through.Â
- Quickly remove from the heat and allow to cool to room temperature. If you’re in a hurry, pour the mix into a mixing bowl and sit on a bowl of ice, or place in fridge for a while. (If it’s not cooled it won’t thicken nicely over your berries).
- Wash, hull and slice strawberries in thirds, or just cut bottoms off of strawberries. Helpful Hint: If you want your pie to have that wow factor, I recommend cutting bottoms off only and placing the strawberries pointed up with the whites facing down.Â
- Place your strawberries in the cooled pie crust then carefully pour the gelatin mixture over the strawberries making sure to cover all of them. It should come up to the sides of the pie crust.Â
- Place covered pie in refrigerator for several hours or overnight to chill before serving.Â

TIME TO ENJOY
As you slice each piece add a dollop of fresh whipped cream, or a squeeze and swirl from a whipped cream cannister. Be warned, this pie is very difficult to cut and serve where it looks clean and tidy on the plate, but that is okay– just add more whipped cream. The fresh flavor is divine. Enjoy!
*You can use vegan gelatin mix that is found in most grocery stores aisles by the Jell-O® Brand.
